Ingredients
- 450 g ground pork lean
- 200 g shrimp peeled
- 50 g glass noodles soaked
- 10 g dried wood ear mushrooms soaked
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 0.5 cup chopped onion
- 2 cloves garlic minced
- 1 tsp fish sauce
- 0.5 tsp black pepper
- 1 tsp sugar
- 20 sheets rice paper wrappers or egg roll wrappers (if preferred)
- 2 tbsp vegetable oil for brushing (optional)
Instructions
- Prepare the filling: In a large bowl, combine ground pork, chopped shrimp, chopped glass noodles, diced wood ear mushrooms, shredded carrots, shredded cabbage, chopped onion, minced garlic, fish sauce, black pepper, and sugar. Mix well until all ingredients are evenly distributed.
- Roll the spring rolls: Place a rice paper wrapper on a clean, damp surface (or egg roll wrapper). Place about 1-2 tablespoons of filling near one edge. Fold the bottom edge over the filling, then fold in the sides. Roll tightly but gently towards the top, creating a snug cylinder. Repeat with remaining filling and wrappers.
- Preheat your air fryer to 375°F (190°C).
- Brush each spring roll lightly with vegetable oil, if desired, for extra crispiness.
- Arrange spring rolls in a single layer in the air fryer basket, ensuring not to overcrowd. You will likely need to cook in batches.
- Air fry for 15-20 minutes, flipping halfway through, until golden brown and shatteringly crisp. Internal temperature of the filling should reach 160°F (71°C).
