Ingredients
  

  • 5 ounce canned tuna drained
  • 15 ounce canned white beans rinsed and drained
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano

Instructions
 

  • In a medium bowl, combine the drained tuna, rinsed white beans, halved cherry tomatoes, sliced red onion, and chopped fresh parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper until well combined.
  • Pour the dressing over the tuna and bean mixture and toss gently to combine all ingredients thoroughly.
  • Serve immediately or chill for about 15-20 minutes for the flavors to meld. Enjoy!

Notes

Add chopped hard-boiled eggs for extra protein, or crumbled feta cheese for a salty tang. Serve in lettuce cups, over a bed of mixed greens, or with crusty whole-grain bread. You can also add chopped cucumber or bell peppers for more crunch and color.
