Gochujang Glazed Carrots
A vibrant, sweet, and spicy side dish that transforms simple carrots into an irresistible culinary experience. This Korean-inspired recipe brings a delightful kick of gochujang, perfectly balanced with savory and sweet notes, making it a perfect accompaniment to various main courses or a standalone healthy snack.
Ingredients
- 1 lb carrots peeled and cut into 1-inch pieces
- 1 tbsp gochujang Korean chili paste
- 2 tbsp soy sauce low sodium preferred
- 1 tbsp honey or maple syrup for vegan option
- 1 tbsp sesame oil toasted
- 2 cloves garlic minced
- 0.5 tsp ginger grated (optional)
- 1 tbsp sesame seeds for garnish
- 2 tbsp green onions chopped for garnish
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, combine the gochujang, soy sauce, honey (or maple syrup), sesame oil, minced garlic, and grated ginger (if using). Whisk until well combined.
- Add the peeled and cut carrots to the bowl with the sauce. Toss until the carrots are evenly coated.
- Place the coated carrots in a single layer in the air fryer basket. You may need to cook in batches depending on your air fryer size.
- Air fry for 15-20 minutes, shaking the basket halfway through, until the carrots are tender-crisp and nicely caramelized. Cooking time may vary based on carrot size and air fryer model.
- Once cooked, transfer the glazed carrots to a serving dish. Garnish with sesame seeds and chopped green onions before serving warm.
Notes
For a milder flavor, reduce the amount of gochujang. You can also roast these carrots in an oven at 400°F (200°C) for 20-25 minutes, or until tender-crisp. Garnish with chopped green onions for extra freshness. Best served warm.
