Ingredients
  

  • 1 lb carrots peeled and cut into 1-inch pieces
  • 1 tbsp gochujang Korean chili paste
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp honey or maple syrup for vegan option
  • 1 tbsp sesame oil toasted
  • 2 cloves garlic minced
  • 0.5 tsp ginger grated (optional)
  • 1 tbsp sesame seeds for garnish
  • 2 tbsp green onions chopped for garnish

Instructions
 

  • Preheat your air fryer to 375°F (190°C).
  • In a large bowl, combine the gochujang, soy sauce, honey (or maple syrup), sesame oil, minced garlic, and grated ginger (if using). Whisk until well combined.
  • Add the peeled and cut carrots to the bowl with the sauce. Toss until the carrots are evenly coated.
  • Place the coated carrots in a single layer in the air fryer basket. You may need to cook in batches depending on your air fryer size.
  • Air fry for 15-20 minutes, shaking the basket halfway through, until the carrots are tender-crisp and nicely caramelized. Cooking time may vary based on carrot size and air fryer model.
  • Once cooked, transfer the glazed carrots to a serving dish. Garnish with sesame seeds and chopped green onions before serving warm.

Notes

For a milder flavor, reduce the amount of gochujang. You can also roast these carrots in an oven at 400°F (200°C) for 20-25 minutes, or until tender-crisp. Garnish with chopped green onions for extra freshness. Best served warm.
