Spicy Honey Gochujang Chicken

Ingredients
- 2 medium chicken breasts boneless
- 1 tablespoon sesame oil divided
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 3 tablespoons gochujang Korean chili paste
- 2 tablespoons honey
- 1 tablespoon soy sauce low sodium
- 1 tablespoon rice vinegar
- 2 cloves garlic minced
- 1 teaspoon fresh ginger grated
- 2 tablespoons water
- 1 tablespoon sesame seeds for garnish
- 2 stalks green onions chopped for garnish
Instructions
- In a small bowl, whisk together gochujang, honey, soy sauce, rice vinegar, minced garlic, grated ginger, and water to create the sauce. Set aside.
- Pat chicken breast pieces dry with paper towels. Season lightly with salt and pepper.
- Heat 1/2 tablespoon of sesame oil in a large skillet or non-stick pan over medium-high heat. Add half of the chicken pieces and sear for 2-3 minutes per side until golden brown and cooked through. Remove from pan and set aside.
- Add the remaining 1/2 tablespoon of sesame oil and sear the rest of the chicken. Remove and set aside.
- Pour the prepared gochujang sauce into the same skillet. Bring to a gentle simmer, stirring frequently, until the sauce thickens slightly, about 2-3 minutes.
- Return all the cooked chicken to the skillet, tossing to coat evenly with the sauce. Cook for another 1-2 minutes until the chicken is thoroughly coated and heated through.
- Garnish with sesame seeds and chopped green onions before serving.
Notes
For an extra kick, add a pinch of red pepper flakes to the sauce. You can also marinate the chicken in a little soy sauce and sesame oil for 15 minutes before cooking for deeper flavor. Serve with steamed rice, a sprinkle of sesame seeds, and chopped green onions.
