Ingredients

  • 1/2 cup soy sauce low-sodium
  • 1/4 cup brown sugar packed
  • 2 tbsp sesame oil toasted
  • 1 tbsp rice wine vinegar
  • 1 pear small
  • 1/2 onion small
  • 4 cloves garlic minced
  • 1 tbsp ginger grated
  • 1/2 tsp black pepper freshly ground
  • 2 tbsp green onions sliced

Instructions

  • In a large bowl, combine soy sauce, brown sugar, sesame oil, rice wine vinegar, grated pear, grated onion, minced garlic, grated ginger, and black pepper. Whisk until the sugar is dissolved.
  • Add thinly sliced beef to the marinade, ensuring all pieces are well coated.
  • Cover the bowl and refrigerate for at least 2 hours, or ideally overnight, to allow the flavors to penetrate the meat.
  • Remove meat from marinade before cooking. Discard any remaining marinade that has come into contact with raw meat.
  • Cook the marinated beef on a hot grill, cast-iron pan, or broiler until cooked through and slightly caramelized.
  • Garnish with sliced green onions before serving, if desired.

Notes

For best results, marinate beef for at least 2 hours, or ideally overnight. This marinade is excellent with thinly sliced ribeye, sirloin, or tenderloin. It can also be adapted for chicken or pork. Serve cooked bulgogi with rice and kimchi.
