Ingredients
- 6 cups Japanese chicken stock pre-made or store-bought
- 1/4 cup sake cooking
- 1 tablespoon soy sauce low sodium
- 1.5 teaspoons sea salt fine
Instructions
- In a medium saucepan, combine Japanese chicken stock, sake, soy sauce, and sea salt.
- Heat over medium heat, stirring occasionally, until the mixture is hot and flavors are well combined, about 5 minutes.
- Taste and adjust seasoning if needed, adding more salt or soy sauce to your preference.
- Use immediately as a soup base for ramen, udon, or other Japanese dishes, or store in the refrigerator for up to 3 days.
Notes
Adjust salt to taste. For a vegetarian version, use vegetable stock. Add a dash of mirin for a touch of sweetness, or a slice of ginger for warmth. This broth can be made in larger batches and stored in the refrigerator for up to 3 days.
