Ingredients
- 1 tbsp olive oil
- 1 medium onion diced
- 2 cloves garlic minced
- 1 tsp ground cumin
- 0.5 tsp ground turmeric
- 1 can (14.5 oz) diced tomatoes undrained
- 1 can (15 oz) chickpeas rinsed and drained
- 0.5 cup vegetable broth
- 3 cups fresh spinach packed
- 0.5 tsp salt
- 0.25 tsp freshly ground black pepper
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes.
- 2. Stir in minced garlic, ground cumin, and turmeric. Cook for another minute until fragrant, being careful not to burn the garlic.
- 3. Add diced tomatoes (undrained), rinsed and drained chickpeas, and vegetable broth to the pot. Stir well to combine.
- 4. Bring the mixture to a simmer. Reduce heat to low, cover, and let it cook for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- 5. Stir in the fresh spinach until it wilts completely, which should take about 2-3 minutes.
- 6. Season the dish with salt and black pepper to taste. Adjust seasonings if needed. Serve hot.
