A comforting and incredibly easy pot roast recipe that delivers tender, flavorful beef with vegetables using just five core ingredients. Perfect for a hassle-free family dinner.
Ingredients
- 3 pound chuck roast trimmed
- 1 packet onion soup mix
- 1 can cream of mushroom soup (10.5 oz)
- 2 pound baby potatoes halved
- 1 pound baby carrots
Instructions
- Place the chuck roast at the bottom of your slow cooker.
- Sprinkle the onion soup mix evenly over the roast.
- Pour the cream of mushroom soup over the roast, spreading it slightly.
- Add the baby potatoes and baby carrots around and on top of the roast.
- Cover and cook on low for 8 hours, or on high for 4-5 hours, until the beef is fork-tender and vegetables are soft.
- Shred the beef slightly with two forks before serving, mixing it with the vegetables and gravy created in the slow cooker.
Notes
For extra flavor, sear the chuck roast on all sides in a hot pan before adding to the slow cooker. You can also add a splash of red wine or beef broth for more liquid. Feel free to swap potatoes for sweet potatoes or add other root vegetables like parsnips.
