- 2 count lamb shoulder chops
- 2 count boneless pork chops
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.25 tsp cumin

Instructions
- Pat the lamb and pork chops dry with paper towels. Season both sides generously with salt, black pepper, smoked paprika, garlic powder, onion powder, and cumin.
- Heat olive oil in a large cast-iron skillet or on a grill pan over medium-high heat until shimmering.
- Carefully place the seasoned chops in the hot pan or on the grill. Sear for 4-5 minutes per side, or until internal temperature reaches 145°F (63°C) for medium-rare pork and 145-160°F (63-71°C) for lamb, depending on desired doneness.
- Remove chops from the pan and let them rest on a cutting board for 5-10 minutes before serving. This allows the juices to redistribute, ensuring tender and flavorful meat.
