Ingredients
- 1 medium potato
- 0.5 cup cooked chicken chopped and seasoned
- 0.5 cup shredded mozzarella cheese
- heavy pinch garlic powder
- heavy pinch paprika
- heavy pinch oregano
- black pepper to taste
- salt to taste (only if needed)
- 2-3 tbsp Alfredo sauce
- a little oil for baking the potato
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potato thoroughly, then lightly coat it with a little oil and sprinkle with a pinch of salt.
- Bake the potato for approximately 1 hour, or until it is fork-tender.
- Once the potato is cooked, carefully slice it open lengthwise, being careful not to cut all the way through. Use a fork to fluff the inside flesh.
- In a mixing bowl, combine the chopped, seasoned cooked chicken, shredded mozzarella, garlic powder, paprika, oregano, and black pepper. Taste and add salt only if your chicken wasn't heavily seasoned.
- Stir in 2-3 tablespoons of Alfredo sauce until the mixture is well combined and creamy.
- Spoon the chicken and cheese mixture generously into the baked potato.
- Return the stuffed potato to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
