Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 2 tbsp soy sauce low sodium
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil divided
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 cup broccoli florets
  • 1 cup carrots julienned
  • 0.5 cup onion sliced
  • 0.25 cup chicken broth low sodium
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 0.5 tsp sriracha optional

Instructions
 

  • In a medium bowl, toss chicken with 1 tbsp soy sauce and cornstarch until evenly coated.
  • Heat 1 tsp sesame oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add remaining 2 tsp sesame oil to the skillet. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
  • Add broccoli florets, julienned carrots, and sliced onion. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  • In a small bowl, whisk together the remaining 1 tbsp soy sauce, chicken broth, honey, rice vinegar, and sriracha (if using).
  • Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
  • Serve immediately over steamed rice or noodles for a delicious homemade takeout experience.

Notes

Feel free to swap chicken for tofu or shrimp. Add your favorite vegetables like bell peppers, snap peas, or mushrooms. Serve over rice or noodles for a complete meal.
