Ingredients
- 2 tsp sesame oil
- 400 g chicken breast thinly sliced
- 1 medium onion thinly sliced
- 2 cloves garlic minced
- 1 inch ginger grated
- 1 cup mushrooms sliced
- 1 cup bell peppers mixed
- 1 cup cabbage shredded
- 1/2 cup sugar snap peas
- 200 g medium egg noodles dried
- 4 tbsp soy sauce light
- 1 tbsp oyster sauce light (optional)
- 1 tsp rice vinegar
- 1 tsp sweetener granulated
- 1/2 tsp chilli flakes
- 2 tbsp water
- 2 tbsp cornflour mixed with 2 tbsp cold water
- 1 tbsp spring onions sliced
Instructions
- Cook noodles according to package instructions, drain, and set aside.
- Heat sesame oil in a large wok or frying pan over high heat. Add sliced chicken and stir-fry until cooked through and lightly browned. Remove chicken and set aside.
- Add onion, garlic, and ginger to the wok. Stir-fry for 2-3 minutes until fragrant.
- Add mushrooms, bell peppers, cabbage, and sugar snap peas. Stir-fry for another 5-7 minutes until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, sweetener, chilli flakes, and water.
- Return the cooked chicken to the wok. Pour the sauce mixture into the wok with the chicken and vegetables. Bring to a simmer.
- Add the cooked noodles to the wok and toss everything together to coat evenly.
- Stir in the cornflour slurry, stirring constantly until the sauce thickens to your desired consistency.
- Garnish with sliced spring onions and serve hot immediately.
Notes
For best results, use lean chicken breast and plenty of Speed Food vegetables like broccoli or bok choy. Adjust chili flakes to your preferred spice level. If you don't have oyster sauce, you can omit it or use an extra teaspoon of soy sauce. Ensure your wok is hot for a proper stir-fry.
