Ingredients
- 1 lb ground beef lean
- 1 small onion diced
- 3 cloves garlic minced
- 1 cup uncooked long-grain rice
- 2 cups beef broth low sodium
- 1 can (14.5 oz) diced tomatoes undrained
- 1 tsp Italian seasoning
- 0.5 tsp salt
- 0.25 tsp black pepper freshly ground
- 0.25 cup fresh parsley chopped (optional
Instructions
- 1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Break it up with a spoon as it cooks.
- 2. Add the diced onion and minced garlic to the pot and cook until the onion is softened, about 3-5 minutes.
- 3. Drain any excess fat from the pot.
- 4. Stir in the uncooked long-grain rice, beef broth, undrained diced tomatoes, Italian seasoning, salt, and black pepper.
- 5. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
- 6. Remove from heat and let stand, covered, for 5 minutes before serving. Fluff with a fork.
- 7. Garnish with fresh chopped parsley, if desired, and serve hot.
Notes
For a leaner dish, use extra-lean ground beef. Feel free to add frozen peas or corn during the last 5 minutes of simmering for extra vegetables. Serve with a crisp green salad for a complete meal.
