Ingredients
- 1 cup green onions chopped
- 0.5 cup parsley fresh
- 3 garlic cloves
- 1 bell pepper any color
- 2 scallions roughly chopped
- 1 tsp thyme dried
Instructions
- Roughly chop all fresh ingredients: green onions, parsley, garlic cloves, bell pepper, and scallions.
- Combine all chopped ingredients and dried thyme in a food processor or high-speed blender.
- Process until a smooth, vibrant green paste is formed. If needed, add 1-2 tablespoons of water or olive oil to achieve the desired consistency.
- Transfer the Epis to an airtight container. Use immediately or store for later.
Notes
Epis is incredibly versatile. Use it to marinate chicken, pork, or fish; sauté with vegetables; or add to rice, beans, and soups for a burst of flavor. For a spicier kick, consider adding a Scotch Bonnet or habanero pepper (seeds removed for less heat) to the blend.
