Ingredients
  

  • 1 lb boneless skinless chicken thighs or breasts
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar optional
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 2 tablespoons vegetable oil for cooking
  • 1/2 cup chicken broth optional
  • 2 stalks green onions chopped
  • 1 tablespoon sesame seeds for garnish

Instructions
 

  • 1. Marinate Chicken: In a medium bowl, combine soy sauce, honey, sesame oil, cornstarch, rice vinegar (if using), minced garlic, and grated ginger. Add the chicken pieces and toss to coat evenly. Let marinate for at least 10-15 minutes at room temperature, or up to 30 minutes in the refrigerator.
  • 2. Cook Chicken: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken, reserving any excess marinade in the bowl. Cook the chicken in a single layer for 3-5 minutes per side, until browned and cooked through. Remove chicken from the skillet and set aside.
  • 3. Simmer Sauce (Optional): If desired, pour the reserved marinade into the hot skillet. If the sauce seems too thick, add 1/4 to 1/2 cup of chicken broth. Bring to a simmer, stirring constantly, until the sauce thickens slightly.
  • 4. Combine and Serve: Return the cooked chicken to the skillet with the sauce. Toss to coat the chicken evenly. Garnish with chopped green onions and sesame seeds. Serve immediately with steamed rice and stir-fried vegetables.

Notes

Serve with steamed rice and your favorite stir-fried vegetables like broccoli or bell peppers. For extra flavor, garnish with sesame seeds and chopped green onions. You can also grill or bake the chicken instead of pan-frying.
