Ingredients
  

  • 1 kg lamb or beef cut into 1-inch cubes
  • 0.5 cup olive oil
  • 0.25 cup lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp cumin ground
  • 1 tsp paprika smoked
  • 0.5 tsp coriander ground
  • 0.25 tsp cayenne pepper optional
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 8 small wooden or metal skewers soaked if wooden

Instructions
 

  • Combine olive oil, lemon juice, minced garlic, cumin, paprika, coriander, cayenne pepper (if using), salt, and black pepper in a large bowl.
  • Add the meat cubes to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight.
  • Preheat your grill to medium-high heat. Thread the marinated meat onto the skewers, leaving a small space between each piece.
  • Grill the kebabs for 3-4 minutes per side, turning occasionally, until cooked to your desired doneness and nicely charred. Internal temperature should reach 145°F (63°C) for medium-rare.
  • Remove from grill and let rest for a few minutes before serving.

Notes

For best flavor, marinate meat overnight. Serve with pita bread, rice, or a fresh salad. Vegetables like bell peppers and onions can be added to the skewers for extra flavor and color. If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning.
