Spicy Shrimp Ramen Bowl
A quick and satisfying ramen dish elevated with plump shrimp, fresh bok choy, and a creamy, spicy kick from gochujang and mayonnaise. Perfect for a weeknight meal with an Asian flair.
Ingredients
- 2 cup water
- to liking Frozen raw shrimp peeled and deveined
- 1 packet Creamy chicken ramen noodles and seasoning
- 3/4 cup Bok Choy chopped
- 1 egg yolk
- 1 tsp mayonnaise
- 1 tbsp gochujang
Instructions
- Bring 2 cups of water to a boil in a small pot.
- Add the ramen noodles from the packet and cook for 2-3 minutes, or until slightly softened.
- Add the frozen raw shrimp and chopped bok choy to the pot. Continue to cook for another 2-3 minutes, or until the shrimp are pink and cooked through and the bok choy is tender-crisp.
- While the ramen cooks, in a small bowl, whisk together the egg yolk, mayonnaise, gochujang, and the ramen seasoning packet. Adjust gochujang to taste for spice.
- Remove the pot from the heat. Stir in the whisked sauce mixture until well combined and creamy.
- Serve immediately and enjoy your spicy shrimp ramen bowl!
Notes
For extra richness, use chicken broth instead of water. You can also add other vegetables like mushrooms or spinach. Adjust gochujang for your preferred spice level. A drizzle of sesame oil at the end adds a wonderful aroma. For a vegetarian option, omit shrimp and use vegetable broth and a plant-based ramen packet, then add tofu or extra veggies.
