An incredibly rich and satisfying one-pan dinner featuring tender chicken, pillowy gnocchi, earthy mushrooms, and fresh spinach in a luscious, creamy sauce.
Ingredients
- 1 lb boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 medium onion chopped
- 8 oz cremini mushrooms sliced
- 2 cloves garlic minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tsp Italian seasoning
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 pkg (16 oz) potato gnocchi
- 4 cups fresh spinach packed
- 1/4 cup Parmesan cheese grated
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add chopped onion and sliced mushrooms to the skillet. Cook, stirring occasionally, until vegetables are softened and mushrooms have released their liquid, about 7-10 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Stir in heavy cream, Italian seasoning, salt, and black pepper. Bring to a gentle simmer.
- Add the potato gnocchi to the simmering sauce and cook according to package directions, usually 2-3 minutes, until gnocchi float to the surface. Stir frequently to prevent sticking.
- Return the cooked chicken to the skillet. Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Ensure chicken is heated through and gnocchi are tender.
- Serve immediately, garnished with grated Parmesan cheese.
Notes
For extra flavor, consider browning the chicken in butter before olive oil. You can substitute chicken thighs for breasts. Adjust seasoning to taste. Serve with a sprinkle of fresh parsley.
