Ingredients
- 500 g chicken thighs boneless
- 0.5 cup plain yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 0.5 tsp ground coriander
- 0.5 tsp dried oregano
- 2 cloves garlic minced
- Salt to taste
- Black pepper to taste
- 4 Pita breads for serving
- 1 cup shredded lettuce for serving
- 1 tomato sliced
- 0.5 red onion thinly sliced
- 0.25 cup garlic sauce or tzatziki for serving
Instructions
- In a large bowl, combine plain yogurt, olive oil, lemon juice, smoked paprika, ground cumin, ground coriander, dried oregano, minced garlic, salt, and black pepper to create the marinade.
- Add the chicken strips to the bowl, ensuring they are thoroughly coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or ideally for 2-4 hours, to allow the flavors to meld and the chicken to tenderize.
- Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated chicken in a single layer, ensuring not to overcrowd the pan. Cook in batches if necessary.
- Cook the chicken for 5-7 minutes, stirring occasionally, until it is cooked through, lightly browned, and slightly caramelized at the edges.
- Remove the cooked chicken from the pan. Serve immediately in warm pita bread with shredded lettuce, sliced tomatoes, thinly sliced red onion, and a generous dollop of garlic sauce or tzatziki. Alternatively, serve over a bed of fluffy rice.
