Ingredients
  

  • 1 pound boneless chicken or pork cut into 1-inch cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 0.5 teaspoon white pepper
  • 8 units wooden skewers soaked

Instructions
 

  • In a bowl, combine soy sauce, sesame oil, rice vinegar, brown sugar, minced garlic, grated ginger, and white pepper. Whisk until well combined.
  • Add the cubed meat to the marinade, ensuring it's fully coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow flavors to meld.
  • Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
  • Thread the marinated meat onto the prepared skewers. Do not overcrowd the skewers, leaving a little space between pieces for even cooking.
  • Grill the skewers for 10-15 minutes, turning them occasionally, until the meat is cooked through, tender, and has appealing char marks on all sides. Cooking time may vary based on meat type and thickness.
  • Serve hot, optionally garnished with fresh cilantro or scallions, and accompanied by a side of steamed rice or a fresh cucumber salad.

Notes

Use chicken, beef, or pork. For a Chinese Char Siu twist, add 1 tbsp hoisin sauce and a pinch of red food coloring to the marinade. For a more authentic Satay, add 1 tbsp ground coriander and cumin, and serve with peanut sauce. Soak wooden skewers for 30 minutes before use to prevent burning.
