A quick and delicious Mexican cheese dip featuring savory crumbled chorizo baked with melted Oaxaca cheese, perfect for serving with warm tortillas.
Ingredients
- 200 g Mexican chorizo crumbled
- 2 cups Oaxaca cheese shredded (about 8 oz)
- 12 count corn or flour tortillas warmed
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium skillet, cook the crumbled Mexican chorizo over medium heat, breaking it up with a spoon, until thoroughly browned and crispy. Drain any excess grease from the skillet.
- Transfer the cooked chorizo to a small oven-safe dish or cast-iron skillet (approximately 8-inch size).
- Evenly sprinkle the shredded Oaxaca cheese over the chorizo, ensuring it's completely covered.
- Bake in the preheated oven for 8-12 minutes, or until the cheese is completely melted, bubbly, and slightly golden around the edges.
- Carefully remove from the oven and serve immediately with warm corn or flour tortillas for dipping.
Notes
For an extra kick, add chopped jalapeños or serrano peppers to the chorizo while cooking. If Oaxaca cheese is unavailable, Monterey Jack or a blend of mozzarella and cheddar can be used. Serve immediately for the best melty experience. You can also finish it under the broiler for a few minutes to get a golden crust on top.
