Ingredients
- 2 lb chicken wings pat dry
- 3 tbsp lime juice freshly squeezed
- 2 tbsp soy sauce low sodium
- 1 tbsp garlic minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 0.5 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup cilantro fresh
- 1 jalapeño seeded and roughly chopped (optional
- 2 cloves garlic
- 2 tbsp aji amarillo paste (or aji amarillo peppers)
- 0.25 cup mayonnaise
- 2 tbsp queso fresco crumbled (or feta cheese)
- 2 tbsp lime juice freshly squeezed
- 2 tbsp olive oil
- 0.25 tsp salt
- 0.125 tsp black pepper
Instructions
- Prepare the chicken wings: Pat chicken wings dry with paper towels.
- Make the marinade: In a large bowl, combine lime juice, soy sauce, minced garlic, ground cumin, smoked paprika, dried oregano, salt, and black pepper.
- Marinate the wings: Add the chicken wings to the bowl, tossing to coat thoroughly. Cover and refrigerate for at least 1 hour, or up to 4 hours.
- Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup, and place a wire rack on top.
- Bake the wings: Arrange the marinated wings in a single layer on the wire rack. Bake for 25 minutes.
- Flip and finish baking: Flip the wings and bake for another 15-20 minutes, or until the skin is golden brown and crisp, and the chicken is cooked through (internal temperature 165°F/74°C).
- Prepare the Aji Verde: While the wings bake, combine cilantro, jalapeño (if using), garlic cloves, aji amarillo paste, mayonnaise, queso fresco, lime juice, olive oil, salt, and black pepper in a blender or food processor. Blend until smooth and creamy. Taste and adjust seasonings as needed.
- Serve: Remove wings from the oven and let rest for a few minutes. Serve hot with the fresh Aji Verde for dipping, alongside fries or roasted potatoes.
