A delightful, healthy, and quick-to-prepare dish featuring tender poached salmon bathed in a creamy, zesty coconut milk sauce infused with lime, chili crisp, ginger, and fresh herbs.
Ingredients
- 2 fillets salmon skinless (approx. 6 oz each)
- 1 can full-fat coconut milk (13.5 oz / 400ml)
- 1 tbsp fresh ginger grated
- 1 tbsp fresh lime juice
- 1 tsp lime zest grated
- 1 tbsp chili crisp or to taste
- 0.25 cup fresh cilantro chopped
- 0.05 tsp salt
- 0.02 tsp black pepper freshly ground
Instructions
- 1. In a large skillet or shallow pot, combine coconut milk, grated ginger, lime juice, lime zest, salt, and pepper. Bring the mixture to a gentle simmer over medium heat, stirring occasionally.
- 2. Carefully place the salmon fillets into the simmering sauce. Cover the skillet and poach for 8-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 3. Remove from heat, stir in the chili crisp and fresh cilantro. Serve the salmon immediately, spooning the rich coconut lime sauce over each fillet.
Notes
Serve with jasmine rice or steamed vegetables for a complete meal. For extra heat, add more chili crisp. Garnish with extra fresh cilantro or basil for added freshness.
