Ingredients
  

  • 2 tbsp olive oil
  • 2 medium chicken breasts cubed
  • 1 medium leek sliced thinly
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 150 ml chicken stock
  • 100 ml creme fraiche full fat
  • 1/2 tsp dried thyme
  • fresh parsley for garnish optional

Instructions
 

  • Heat olive oil in a large pan or skillet over medium heat. Add the cubed chicken breasts and cook until lightly browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
  • In the same pan, add the sliced leek, chopped onion, and minced garlic. Sauté for 5-7 minutes until the vegetables are softened and fragrant, being careful not to burn the garlic.
  • Pour in the chicken stock and add the creme fraiche and dried thyme. Stir well to combine, bringing the sauce to a gentle simmer. Season with salt and black pepper to taste.
  • Return the cooked chicken to the pan, stirring to coat it evenly with the creamy sauce. Let it simmer gently for another 3-5 minutes, allowing the flavors to meld and the chicken to heat through.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Serve over pasta, rice, or with crusty bread. For a healthier option, use low-fat creme fraiche or a touch of milk/cream. Add a sprinkle of fresh parsley or chives before serving for extra flavor and color. This recipe serves 2.
