Ingredients
- 2 tbsp olive oil
- 2 medium chicken breasts cubed
- 1 medium leek sliced thinly
- 1 small onion finely chopped
- 2 cloves garlic minced
- 150 ml chicken stock
- 100 ml creme fraiche full fat
- 1/2 tsp dried thyme
- fresh parsley for garnish optional
Instructions
- Heat olive oil in a large pan or skillet over medium heat. Add the cubed chicken breasts and cook until lightly browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
- In the same pan, add the sliced leek, chopped onion, and minced garlic. Sauté for 5-7 minutes until the vegetables are softened and fragrant, being careful not to burn the garlic.
- Pour in the chicken stock and add the creme fraiche and dried thyme. Stir well to combine, bringing the sauce to a gentle simmer. Season with salt and black pepper to taste.
- Return the cooked chicken to the pan, stirring to coat it evenly with the creamy sauce. Let it simmer gently for another 3-5 minutes, allowing the flavors to meld and the chicken to heat through.
- Serve hot, garnished with fresh parsley if desired.
