Easy Feta-Baked Chicken
A simple yet flavorful Mediterranean-inspired dish featuring tender chicken breasts baked with crumbled feta cheese, juicy cherry tomatoes, and aromatic herbs. Perfect for a weeknight dinner.
Ingredients
- 2 boneless skinless chicken breasts about 6-8 oz each
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 0.5 cup cherry tomatoes halved
- 0.75 cup crumbled feta cheese
- 1 tablespoon fresh oregano chopped (or 1 tsp dried)
- Optional: 0.5 lemon sliced
Instructions
- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little olive oil.
- Pat chicken breasts dry with paper towels. Season generously on both sides with salt, pepper, and paprika.
- Place the seasoned chicken breasts in the prepared baking dish. Drizzle with olive oil.
- Scatter the halved cherry tomatoes around the chicken. Sprinkle the crumbled feta cheese evenly over the chicken and tomatoes.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The feta should be slightly golden and bubbly.
- Garnish with fresh chopped oregano and lemon slices if desired before serving.
Notes
Serve with rice, quinoa, or a fresh green salad. For extra flavor, marinate the chicken in olive oil and lemon juice for 30 minutes before baking. You can also add Kalamata olives or chopped bell peppers.
