Ingredients
- 1.5 cup all-purpose flour
- 0.75 cup granulated sugar
- 2 tbsp unsweetened cocoa powder
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp salt
- 1 tbsp corn starch
- 2 tsp instant coffee granules dissolved in 1 tbsp hot water
- 1 cup milk
- 1 large egg lightly beaten
- 0.5 cup vegetable oil or melted unsalted butter
- 1 tsp vanilla extract
- 0.5 cup chocolate chips
Instructions
- Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, salt, and corn starch.
- In a separate medium bowl, whisk together the milk, lightly beaten egg, vegetable oil (or melted butter), and vanilla extract. Dissolve the instant coffee granules in 1 tbsp hot water and add to the wet ingredients.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are fine. Overmixing can lead to tough muffins.
- Gently fold in the chocolate chips.
- Divide the batter evenly among the 12 muffin cups. Fill each cup about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be lightly golden brown and spring back when gently pressed.
- Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
Notes
For an extra coffee kick, sprinkle a few instant coffee granules on top before baking. If you prefer a richer chocolate flavor, use dark chocolate chips. These muffins freeze well; simply thaw at room temperature or warm briefly in the microwave.
