Ingredients
  

  • 500 g boneless skinless chicken breast
  • 1 large bell pepper any color
  • 1 medium red onion cut into wedges
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 113 g unsalted butter softened
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped
  • 0.5 tsp lemon zest
  • 0.25 tsp salt

Instructions
 

  • Prepare the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. In a large bowl, combine chicken pieces, bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil, salt, and black pepper, tossing to coat evenly.
  • Assemble the skewers: Thread the chicken and vegetables alternately onto the prepared skewers.
  • Preheat grill to medium-high heat (200C/400F). Lightly oil the grill grates.
  • Grill the skewers for 13 minutes, turning occasionally, until the chicken is lightly browned.
  • Meanwhile, combine all of the butter ingredients (softened unsalted butter, minced garlic, chopped fresh parsley, chopped fresh chives, lemon zest, salt, and pepper) in a small mixing bowl. Mix until well combined.
  • After 13 minutes, flip the skewers. Generously brush the cooked side of the skewers with the prepared herb butter. Continue to grill for another 13 minutes, or until chicken is cooked through and vegetables are tender-crisp, brushing with more butter as desired.
  • Remove from grill and let rest for a few minutes before serving.

Notes

Feel free to use your favorite vegetables like bell peppers, zucchini, or cherry tomatoes. For a spicier kick, add a pinch of chili flakes to the herb butter. Serve with rice, quinoa, or a fresh green salad for a complete meal. You can also swap chicken for shrimp or firm tofu.
