A vibrant and spicy Latin American condiment made from ají peppers, tomatoes, cilantro, garlic, and onions, perfect for complementing a wide array of dishes.
Ingredients
- 2 units ají peppers (Capsicum baccatum)
- 0.25 cup vegetable oil
- 1 medium tomato roughly chopped
- 0.5 cup fresh cilantro chopped
- 2 cloves garlic peeled
- 0.25 medium onion roughly chopped
- 0.25 cup water or as needed
- to taste teaspoon salt
- to taste teaspoon black pepper
Instructions
- Roughly chop the ají peppers, tomato, cilantro, garlic, and onion.
- Combine all prepared ingredients (ají peppers, oil, tomato, cilantro, garlic, onion, water, salt, and pepper) in a food processor or blender.
- Blend until smooth or to your desired consistency. If you prefer a thinner sauce, add a tablespoon more water at a time until you reach the desired texture.
- Taste the sauce and adjust salt, pepper, or other seasonings as needed.
- Serve immediately as a condiment with your favorite main dishes or store in an airtight container in the refrigerator for later use.
Notes
For a milder sauce, deseed the ají peppers. Adjust water content for desired consistency. You can substitute ají peppers with serrano or jalapeño for a different heat profile. Store in an airtight container in the refrigerator for up to a week.
