- Beat in the egg until well combined.
- Stir in the ube extract and ube halaya until the mixture is uniform in color and texture.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Cover the dough and chill in the refrigerator for at least 30 minutes to an hour. This helps with handling and achieving better crinkles.
