A simple, versatile filling made with tender spinach and salty feta cheese. Perfect for savory pies, omelets, or as a delicious side dish.
Ingredients
- 500 g fresh spinach chopped
- 1 tbsp olive oil optional
- 150 g feta cheese crumbled
- 0.25 tsp salt to taste
- 0.125 tsp black pepper freshly ground
Instructions
- Heat olive oil in a large pan or skillet over medium heat. Add the chopped spinach and cook, stirring occasionally, until it has completely wilted and softened, about 3-5 minutes. Remove the cooked spinach from the heat and transfer it to a colander to drain any excess liquid. Once slightly cooled, gently press out any remaining water from the spinach. Transfer the spinach to a bowl and mix in the crumbled feta cheese. Season with salt and freshly ground black pepper to taste. Serve warm or chilled as a filling or side dish.
Notes
For extra flavor, sauté a clove of minced garlic with the spinach. If using frozen spinach, thaw and squeeze out excess water thoroughly before cooking. This filling is fantastic in omelets, quiches, phyllo pastries, or simply as a side dish with grilled chicken.
