Creamy Whipped Feta & Tomato Dip
A delightful and easy-to-make dip combining creamy, tangy whipped feta with the sweet burst of oven-roasted cherry tomatoes. Perfect for any gathering.
Ingredients
- 1 cup feta cheese crumbled
- 2 tbsp extra virgin olive oil plus more for drizzling
- 1 tbsp fresh lemon juice
- 1/4 cup plain Greek yogurt or milk
- 1 pint cherry tomatoes
- 2 cloves garlic minced
- 1/4 tsp dried oregano
Instructions
- Preheat oven to 400°F (200°C).
- On a baking sheet, toss the cherry tomatoes with 1 tbsp of olive oil, minced garlic, dried oregano, salt, and pepper. Roast for 20-25 minutes, or until the tomatoes are softened and slightly burst.
- While tomatoes roast, combine crumbled feta, remaining 1 tbsp olive oil, lemon juice, and Greek yogurt in a food processor. Blend until smooth and creamy. If too thick, add a tiny bit more yogurt or milk until desired consistency is reached.
- Spoon the whipped feta into a serving bowl.
- Top the whipped feta with the warm roasted tomatoes.
- Drizzle with a little extra virgin olive oil and garnish with fresh basil leaves before serving.
Notes
For extra flavor, add a pinch of red pepper flakes or a sprinkle of fresh oregano to the tomatoes before roasting. Serve with warm pita bread, crusty baguette, or your favorite crackers. Leftovers can be stored in the fridge for up to 3 days.
