Ingredients
- 200 g Korean somen noodles
- 3 tbsp Gochujang Korean chili paste
- 1 tbsp Gochugaru Korean chili powder
- 2 tbsp Rice vinegar
- 2 tbsp Sugar
- 1 tbsp Soy sauce
- 1 tbsp Sesame oil
- 2 cloves Garlic minced
- 1 tsp Sesame seeds toasted
- 0.5 Cucumber medium
- 1 Hard-boiled egg large
- 0.25 cup Kimchi chopped
Instructions
- Cook the somen noodles according to package directions until al dente. Usually, this takes about 3-4 minutes.
- Drain the cooked noodles thoroughly and rinse them under cold running water until completely chilled. Drain very well to remove excess water.
- While the noodles are cooking, prepare the sauce: In a mixing bowl, combine the gochujang, gochugaru, rice vinegar, sugar, soy sauce, sesame oil, minced garlic, and toasted sesame seeds. Whisk until smooth.
- Add the chilled, drained noodles to the bowl with the sauce. Using your hands or tongs, gently toss and mix the noodles until they are evenly coated with the spicy sauce.
- Transfer the Bibimmyeon to a serving bowl. Arrange the julienned cucumber, halved hard-boiled egg, and chopped kimchi (if using) on top of the noodles.
- Serve immediately and enjoy the refreshing, spicy, and satisfying flavors of Bibimmyeon!
Notes
For a richer sauce, you can add a tablespoon of grated apple or pear. Adjust gochugaru (Korean chili powder) for your desired spice level. Feel free to add other toppings like shredded carrot, perilla leaves, or thinly sliced grilled beef (bulgogi) for a heartier meal.
