  • 225 g pasta
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 400 g canned diced tomatoes undrained
  • 120 ml heavy cream
  • 140 g fresh spinach
  • salt to taste
  • black pepper to taste

Instructions
 

  • Cook pasta according to package directions until al dente. Drain, reserving about 1/2 cup pasta water.
  • While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  • Stir in the canned diced tomatoes and bring to a simmer. Cook for 5-7 minutes, allowing the sauce to thicken slightly.
  • Reduce heat to low, then stir in the heavy cream and fresh spinach. Cook until spinach wilts, about 2-3 minutes. Season generously with salt and black pepper to taste.
