Ingredients
- 1 tbsp olive oil
- 2 boneless skinless chicken breasts cut into 1-inch cubes
- 1 tsp garlic powder
- salt and pepper to taste
- 8 oz fettuccine or spaghetti
- 2 tbsp butter
- 3 cloves garlic minced
- 1.5 cup heavy cream
- 0.5 cup Parmesan cheese grated
- 0.25 cup fresh parsley chopped
Instructions
- Season chicken cubes with garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Cook pasta according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer.
- Stir in grated Parmesan cheese until melted and smooth. If sauce is too thick, add a splash of reserved pasta water.
- Add cooked pasta and chicken to the skillet, tossing to coat evenly with the sauce. Garnish with fresh chopped parsley and serve immediately.
