Ingredients
- 4 ounce salmon fillets skin-on or off
- 2 tablespoon olive oil divided
- 1 teaspoon dried Greek oregano
- 0.5 teaspoon ground cumin
- 0.5 teaspoon fresh thyme leaves chopped
- 0.5 teaspoon salt or to taste
- 0.25 teaspoon black pepper or to taste
- 1 cup cherry tomatoes halved
- 1 medium bell pepper any color
- 0.5 small red onion thinly sliced
- 0.25 cup Kalamata olives pitted and halved
- 1 lemon thinly sliced
- 2 tablespoon fresh parsley chopped
- 2 tablespoon feta cheese crumbled
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, combine dried oregano, ground cumin, fresh thyme, salt, and pepper.
- Place salmon fillets on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle generously with the seasoning mix.
- On the other side of the baking sheet, arrange the cherry tomatoes, bell pepper slices, red onion slices, and Kalamata olives. Drizzle with the remaining 1 tablespoon of olive oil and sprinkle with a pinch of salt and pepper. Toss gently to combine.
- Arrange lemon slices over and around the salmon and vegetables.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp. Cooking time may vary depending on the thickness of your salmon.
- Remove from oven. Garnish with fresh parsley and crumbled feta cheese, if desired. Serve immediately.
